Introduction

It is an easy Matar soup recipe, and a must-try whenever you buy fresh green peas. It is a mild, sweet soup that soothes your taste buds. It creates the perfect balance of sweetness of fresh green peas, and fried onion versus various spices that are regularly used in an Indian kitchen. Additionally, green peas provide numerous nutrients and health benefits, such as vitamins A, C, K, and B vitamins, as well as minerals like iron and magnesium. They are high in fiber, which aids digestion. They are a wonderful source of plant-based protein. The antioxidants in green peas protect the body against chronic diseases, while their fiber and potassium support heart health by lowering blood pressure and cholesterol. Also, they help regulate blood sugar levels, making them a good choice for managing diabetes.

What You Need

  • Fresh green peas – 1½ cups
  • Onion cut in square shape – 3/4 cup
  • Garlic Cloves – 2-3
  • Mild light green chili – 1 small
  • Ginger – 1-inch piece
  • Coriander leaves - a handful
  • Cooking oil – ¼ tablespoon
  • Desi ghee – 1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Salt – 1 teaspoon (or as per the taste)
  • Mint leaves – for garnishing
  • Asafoetida – ¼ teaspoon

How to Make It

Chop finely green chili, garlic cloves, ginger, and coriander leaves.

Add oil to the frying pan and heat it.

Then add cumin seeds and let them splutter.

Then add chopped onion, garlic, chili, and ginger to it and fry it until onion turns soft and light pink.

Then add green peas and a pinch of salt. Roast everything for 4-5 minutes.

Then add finely chopped coriander leaves and mix everything well. Turn off the burner and let the mixture cool down.

Then grind it in a mixer jar to make a fine paste. You may add a little water while making the paste.

In a frying pan add desi ghee and heat it. Then add asafoetida powder and the above paste.

Add water to adjust the consistency.

After it starts boiling add salt. Let it boil for around 5 minutes.

Your delicious soup is ready. Garnish it with mint leaves and serve it hot. You may add black pepper powder if you like.
