Introduction

Pumpkin Paratha is a delicious and nutritious Indian flatbread made with pumpkin puree and spices. It is easy to prepare and perfect for any meal. Pumpkin, or "kaddu" in Hindi, provides numerous health benefits. It is an excellent source of vitamins A and C, that helps in maintaining healthy vision, enhancing immune function, and promoting radiant skin. Pumpkins are also rich in dietary fiber, which aids in digestion and helps maintain a healthy weight by keeping you fuller for longer. In addition to that, pumpkins are low in calories and high in water content, making them a hydrating and nutritious choice.

What You Need

  • Pumpkin 300 gm (grated),
  • Garlic cloves - 8-10
  • Green chilly (medium spicy) - 1
  • Sesame seeds (roasted) - 2 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - a pinch
  • Asafoetida - a pinch
  • Mustard seeds - ½ teaspoon
  • Cumin seeds - 1 teaspoon
  • Cooking oil - 1 tablespoon
  • Salt - 1 teaspoon (or as per the taste)
  • Coriander leaves - handful
  • Multigrain atta - 6 cups

How to Make It

Grate pumpkin, green chilly and garlic cloves.

Add 1 tablespoon oil to the frying pan. After it is heated, add mustard seeds.

After they start sputtering add cumin seeds, asafoetida, and turmeric powder. Then add grated pumpkin, chili, and garlic to it.

Then add coriander powder and mix everything well. Cover it well and let it cook for 5-7 minutes. Check in between so that it does not get burnt.

Meanwhile sift multigrain atta in a big bowl. Add salt, finely chopped coriander leaves, and roasted sesame seeds to it.

Then add the cooked pumpkin mixture to it and mix everything well with the help of a spoon. Let it cool down a bit before you knead the dough.

After kneading the dough, cover it with a wet cloth and let it set for 10 mins.

After 10 minutes, you can roll the parathas and roast them in a pan until they turn golden brown from both sides.

Serve the hot parathas with raita and pickle.

Pro Tips

  • Do not add salt to the pumpkin mixture, instead add it to multigrain atta.

  • You may add extra chilies if you like it to be spicy.

  • Do not add so much water while kneading the dough, instead add a little water and knead it with a little extra force.

Pumpkin (Kaddu) provides many health benefits, if included in your regular diet. But many people do not like the taste. I am coming with a series of pumpkin dishes. Just try them, and I promise you won't resist to include pumpkin in your diet!
