Introduction
Bottle gourd also called “Dudhi” or “Lauki” in India is one of the must-have vegetables in your regular meals. This curry is delicious when we cook it properly with an appropriate mix of spices. The texture of cooked bottle gourd matters a lot and determines the taste of the curry. I am sure that this perfect recipe will not disappoint you and you will start including Lauki in your diet. Also, Lauki provides immense health benefits and combined with Bengal gram it is a perfect recipe for weight loss.
What You Need
- Garlic cloves – 4-5
- Mild light green chili – 1
- Curry leaves – 15-16
- Cooking oil – 1 tablespoon
- Mustard seeds – ½ teaspoon
- Cumin seeds – ½ teaspoon
- Turmeric powder – ½ teaspoon
- Goda masala – 1 teaspoon
- Grated jaggery – 1 teaspoon
- Salt – 1 teaspoon (or as per the taste)
- Coriander leaves (for garnishing)
How to Make It

Soak Bengal gram (Chana dal) for an hour or so.

Chop green chili and garlic cloves. Also, peel off the bottle gourd and cut it into medium square-shaped pieces.

Add oil to a frying pan and heat it.

Then add mustard seeds. Once they start to splutter, add cumin seeds, chopped green chili, garlic, and curry leaves.

Add turmeric powder after the garlic turns light pink.

Then add chopped bottle gourd and soaked Bengal gram.

Mix everything well and add 1/4 cup of water.

Cover it and cook on low flame for about 10 minutes.

Once the bottle gourd becomes a little soft, add salt, goda masala, and grated jaggery and mix well.

Cover it and cook for 5 minutes so that all water gets absorbed.

Garnish it with chopped coriander leaves and serve hot with Chapati or Bhakri.
Pro Tips
Do not overcook, otherwise taste gets degraded. Keep checking in between to avoid burning.
You may skip goda masala and jaggery, and still it tastes so good.
